Aubergine & Pepper Stir Fry Curry Kit
Prasadini & I both love aubergines, their colour, taste and texture always leave us wanting more. This is an adapted version of the Sri Lankan deep fried aubergine curry. In an attempt to retain the gorgeous colour and be healthier, we’ve played around with our original method and come up with something we can both get behind. It still has a lovely curry flavour and can be served with our yellow fried rice and papapdoms for a satisfying meal.
